Description
Pink Oyster (Pleurotus djamor) is one of the most striking gourmet oyster mushrooms. It produces brilliant pink to salmon-colored clusters with thin, delicate, fan-shaped caps. As the mushrooms mature, the color generally becomes lighter, and cooking usually causes much of that bright pink coloration to fade.
Pink Oysters are known for extremely fast, aggressive mycelial growth. They’re a warm-weather oyster species and generally prefer warmer fruiting conditions than Pearl or Blue Oysters. Because of that, they’re particularly useful for growers working during warmer months or in warmer indoor environments.
They’re also heavy cluster producers. Under good conditions, the fruits develop in dense bouquets with overlapping caps. Fresh mushrooms have a fairly substantial aroma, while cooking brings out a savory flavor that’s often described as somewhat meaty or bacon-like. Their texture works especially well when sautéed or fried until the edges become crispy.
